Power Packed Spinach & Quinoa Salad


Who doesn’t love spinach and quinoa salad topped with fruits, veggies, and toasted almonds.  This salad was quick and simple to prepare and it satisfied every craving I had. Since I work during the day and my evenings are short I am always looking for a healthy and quick meal to prepare. The dressing on the salad is absolutely delicious, its combination of ingredients fits this salad perfectly.  I was craving a poppy-seed dressing but thought what better time to incorporate those chia seeds I purchased into a homemade citrus dressing.

I wanted to incorporate protein packed ingredients so I chose the avocado and quinoa which contain all 18 essential amino acids necessary for the body to form a complete protein; this makes it easy to digest.  Almonds are also full of protein and give the salad the crunch I was looking for. The other fruits and veggies I topped the salad with are loaded with power building nutrients my body definitely needs.

Oh, and I can’t forget  about the dressing it is low in fat; I used an extra virgin olive oil, vinegar, juice from an orange, wild flower honey, chia seeds, and a dash of garlic salt. The chia seeds are loaded with protein, Omega 3 fatty acids and fiber.  It was super simple to make and taste absolutely delightful on this salad. Recipe is below….


1/4 cup extra virgin olive oil
Juice from one small orange
2 tablespoons of rice vinegar
2 teaspoons wild flower honey
1 teaspoon chia seeds
Dash of garlic salt for taste

Instructions- Orange Chia Seed Dressing

•Combine olive oil, juice from orange, rice vinegar, honey, and chia seeds in a jar and mix.  Add garlic salt to taste.

Yellow Pepper
Cherry tomatoes
1 Halo or small orange
Pea pods
1/2 serving quinoa

Instructions- Salad

•Make 1/2 a serving of quinoa according to directions on package.

•Lay bed of raw spinach on a plate and top with all other fruits and vegetables.

•Once quinoa is cooked put in middle of the bed of spinach with vegetables and fruits surrounding it.

•Top with toasted almonds.

•Note- I sprinkled flax-seed on top as well.
